Spicy Lentil Dip

Lentils are wonderful little nutrient dynamos! Aside from magnesium, iron, potassium, and folate, lentils contain fiber and protein, so they can be a great meat substitute! They also happen to be very versatile and can be incorporated into a variety of dishes or served by themselves.


I follow a specific food plan due to my autoimmune disease, so I'm always looking for healthier options and allergen-free foods. Food allergies affect up to 15 million Americans and finding pre-prepared options can be challenging.

Enjoy Life sent me some Sea Salt Lentil Chips inspiring me to make this Spicy Lentil Dip for a healthy, filling snack. Enjoy Life lentil chips are the perfect plant-based, protein-filled vehicle for my spicy lentil dip. I can't wait to serve this at my next family get together!



Ingredients:

1 small yellow onion, chopped

2 garlic cloves, chopped

1 tablespoon avocado oil

1 (15 oz) can lentils, drained and rinsed

1/4 cup extra virgin olive oil

1 tablespoon curry powder

1/8 teaspoon crushed red pepper flakes

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon lime juice


Directions:

1. To a medium pan, add the avocado oil, onion, and garlic. Sauté over medium heat for 5 minutes.

2. When onion is translucent, add all ingredients to a food processor and process until smooth.

3. Serve with your favorite variety of Enjoy Life Lentil chips and vegetable sticks.
