I don't eat many desserts. For one, I have an autoimmune disease and excess sugar is the perfect way to bring about some negative symptoms. And two, I don't tolerate dairy or gluten, so that cuts out most pre-packaged desserts. If I want a treat, I generally have to make it from scratch. Every now and then when I have time, I'll get in the kitchen and experiment. One of those days happened yesterday and it was heavenly! Here is the most wonderful dessert, especially if you have dietary restrictions.
I had a bunch of very ripe bananas, so it was either cut them up to freeze for smoothies, or put them to use in a delicious bread. I made my own banana bread recipe and have to say it turned out fantastically! This bread is NOT sweet, so if you prefer a more sweet version, this is not the one for you. It's only slightly sweet, so this is where the avocado icecream comes in!
Gluten-Free Banana Bread
Ingredients:
3 Ripe Bananas
1.5 cups cassava flour
1.5 cups gluten free oats
1 tsp cinnamon
3 Tbsp coconut oil melted
1 whole egg or egg substitute
3 tsp baking powder
3/4 tsp salt
3 Tbsp honey
3/4 cup coconut milk
Directions:
1. Preheat oven to 350 degrees
2. Mix all ingredients but flour and oats
3. Add four and oats, mix well
4. Add mixture to a bread pan (greased or with parchment paper)
5. Bake for 70 minutes
6. Let cool completely before slicing
Chocolatey Avocado "Ice cream"
Ingredients:
1 ripe avocado
1/2 large ripe banana
1/4 cup maple syrup
3 Tbsp cacao powder
1/4 cup coconut cream (or nut milk)
1/2 tsp vanilla
dash of sea salt
Directions:
1. Add all ingredients to a blender
2. Process until smooth
3. Enjoy as a pudding
4. Or freeze for 1 hour
5. Let sit out for 15 minutes before serving as an ice cream
6. Optional: Top a slice of banana bread with your avocado ice cream and add sliced strawberries, blueberries, and pecans
